Our pizza is prepared according to the traditional Italian techniques.
To make the dough, we use Italian flour with high protein content (grinding "00").
This type of flour is ideal for proper maturation of the mixture, making pizza light, less caloric and better digested by the body.

the Dough

The temperature and humidity in the room strongly affect the quality of the pizza. Our pizzaiolo takes these parameters into account when kneading the dough.
According to the traditional technology, the cakes for the future pizza are formed by hand, so that the mixture is saturated with oxygen, and the rim turns crispy.

the Oven

For cooking pizza, we use a Neapolitan wood burning stove and live fire. The temperature in the oven is 450 degrees Celsius, and the pizza is baked 60-90 seconds!
For this time, the dough has time to be prepared, while the filling remains juicy.
